Chicken Salad
2 chicken breasts, cooled and minced
1 cup finely chopped celery
1-1/2 T lemon juice
salt and pepper lightly; seasoning salt
1/2 T accent, if desired
1/2 c mayonnaise or salad dressing
Cook chicken in small amount of salted water. Cool before dicing or mincing in small bits Add the other ingredients to the mayonnaise. Thin with chicken broth if it is too heavy. Fold in the chicken. Mix well. Season with salt and pepper to taste. A small amount of finely chopped onion may be added. Refrigerate.
