Grandma Bea's Fruit Cake

2 cups sifted flour

1 1/2 teaspoons baking powder

1/2 teaspoon salt

1/2 pound pecans (or walnuts)

1 pound mixed candied fruit

1/4 pound candied cherries

5 eggs

1/4 pound dates

1/2 pound red, green and yellow pineapple

2 cups (mixed to your preference) nuts, dates, and candied cherries

1 cup undrained crushed pineapple

1/2 cup apricot baby food

1 cup sugar

1 cup butter

 

Sift together the flour, baking powder and salt. Cut fruit and nuts into small pieces and mix with 1/3 of the flour mixture. Now cream together the sugar and butter. Add the eggs one at a time, beating well. Add 3 tablespoons of the flour mixture into this and then remaining flour alternately with the crushed pineapple and apricot baby food. Add nuts and fruit. Line pans with 2 layers of wax paper. Bake in stove pipe or loaf pans at 225 degrees for 2 1/2 to 3 hours.
