MULIGATAWNY SOUP
 
Saute 1/2 onion, 1 diced carrot, 2 ribs celery in 1/4 cup butter or margarine.  Stir in 1 1/2 T flour, 2 t curry powder and cook and stir for 3 minutes.  Simmer 15 minutes with 4 C chicken broth and 1 bay leaf.
 
Add and simmer an additional 15 minutes:
1-2   tart apples, peeled and diced
1/2 C cooked rice
1/2-1 C cooked chicken
1/4  t pepper
1 t salt
1/8 t thyme
 
At serving time stir in 1/2 C warm cream or milk.
Makes 7 cups of soup.
