NEVER-FAIL MERINGUE

1 T cornstarch
1/2 c boiling water
2 T cold water
3 egg whites
6 T sugar
1 t vanilla
pinch of salt

Blend cornstarch and cold water in saucepan. Add boiling water and cook, stirring until clear and thickened. Cool Completely. With electric beater at high speed, beat egg whites, until foamy. Gradually add sugar and beat until stiff. Turn to low. Add salt and vanilla. Slowly beat in cornstarch mixture. Spread on cooled pie filling in shell. Bake at 350 degrees for about 10 minutes.
