VEGETABLE BEEF SOUP STOCK

3 lb beef shank
1 pt 2oz tomato juice
1/3 c onion
4 t salt
2 t Worcestershire sauce
1/4 t chili powder
2 bay leaves

Any or all of the following:

basil
rosemary
marjoram
cumin
parsley
pepper
paprika
oregano

Combine with 6 c water. Cover and simmer 2 hours. Cut up meat and add 2 c tomatoes and 1 pkg frozen mixed vegetables, potatoes, onions, carrots, and leftovers. Cover and simmer 1 hour.
