Scones

Ingredients:
(12 Servings)
1)   2 cups Cake Flour
2)   2 1/2 cups Flour
3)   3 1/4 tsp. Baking Powder
4)   1 1/4 tsp. Salt
5)   1/2 cup Sugar
6)   6 oz. Butter (chilled cubes)
7)   2 whole Eggs
8)   2 Egg Yolks
9)   3/4 cup Milk
10) 1/4 cup Cream

Preparation:
1)   Sift sugar, mixing well.
2)   Cut butter into four pieces using a
       paddle attachment...until butter is
       evening distributed into the flour.
3)   Beat eggs well.  Add milk, mix well.
       Add egg mixture to flour just until
       moistened, not completely mixed.
4)   Dust table with flour.
5)   Fold dough about 7 times.
6)   Gently roll dough out almost 1" thick.
7)   Cut out with 3" cookie cutter.
8)   Brush tops lightly with cream and egg
       wash.
9)   Sprinkle with sugar.
10) Gather scraps and roll only once more.
11) Bake at 375 degrees f. for about 11
       minutes.
