VoIP
Collin's book provides a simple straight forward review of Voice over IP. It is arguably the best book to understand VoIP. If you need to understand SIP, H.323, Megaco, or Softswitches this book is a must.
Make sure you read this book before employing VoIP at your workplace. It discusses about all the flavours of VoIP including SIP, H.323, Cisco and others.
This IDC insight is useful to know about the basics of VoIP security. It also includes what key IP telephony vendors are doing with regard to VoIP security. The added advantage is that it is available in pdf format, so you can easily print it out. However I recommend that you get it only if you are a professional in this field.
This book is less technical and introduces VoIP from a more business-minded approach.

It talks about how a simple telephone and a data network operate and then goes into the details of SIP. The nice part is that this book is feasible for not only engineers but also non-technical persons like executives and managers.
If you are a software developer and need to learn the technical ins and outs of SIP then this books is definitely the one to get. However you should refer to this one once you have a basic understanding of SIP.
RTP
Colin Perkins is a well-known name when it comes to working on RTP/RTCP. If you are using this protocol, you can't miss this book. It includes all aspects of the protocols with sufficient details.
